Steamed Mud Crab with Minced Pork and Shiitake

Select pork belly with even amount of fat, cut up half by hand and half minced meat, mix in with minced mushrooms, salt, pepper, and soy sauce. Blend all the ingredients together and shape into a meatloaf. Place a whole chopped red crab on top of the meatloaf, and steam for 8 minutes. Drizzle with Chinese wine ( Hua Diao Wine), steam for 2 minutes, and it is ready to serve!
